Ingredients

1/2 c. chocolate chips, melted
3/4 can of black beans, drained
2 eggs
1/2 c. vegetable oil
1 t. vanilla
1/4 c. cocoa
2/3 c. sugar
1 t espresso powder (optional)
1/3 c. flour
1/2 t. baking powder
1/2 t. salt

Ingredients

1/2 c. chocolate chips, melted
3/4 can of black beans, drained
2 eggs
1/2 c. vegetable oil
1 t. vanilla
1/4 c. cocoa
2/3 c. sugar
1 t espresso powder (optional)
1/3 c. flour
1/2 t. baking powder
1/2 t. salt

Directions

  1. Melt the chocolate chips.
  2. Purée beans, eggs, and veg. oil in a blender. Place into mixing bowl. Mix in melted chocolate and vanilla.
  3. In another large bowl, combine cocoa, sugar, espresso powder, flour, baking powder, and salt.
  4. Pour puréed bean mixture over dry ingredients and stir just until combined. Mixture will be very thick.
  5. Place in greased 9x9 baking pan and bake at 350℉ (180℃) for 20 minutes.
