Five ingredients. Twenty-five minutes. One incredibly satisfying dinner.
Cod fillets get seasoned with sage, salt, and pepper, then blanketed in grated Swiss cheese and a thick layer of sour cream before baking.
The sour cream keeps the fish impossibly moist while the Swiss melts into a golden, bubbly crust on top.
This is the kind of low-effort, high-reward recipe you keep in your back pocket for busy weeknights.
Kitchen Tips
- Pat the cod dry: Removing surface moisture helps the cheese and sour cream stick instead of sliding off.
- Gruyère upgrade: Swap Swiss for Gruyère if you want a nuttier, more complex flavor.
- Don’t overbake: Cod goes from tender to rubbery fast. Pull it when it just flakes with a fork.
