I'm a new member and while browsing I noticed that some time back a request had been made for Purefoy Hotel recipes. If anyone is still interested, I would be happy to post a few at a time.

The best bet for adding recipes is to use the Submit a Recipe link. That way they will be available to everyone and integrated into the full collection.

We'd love to add the recipes to the collection.

Hi, I just joined today. I was looking for a recipe for Baked Lima Beans with tomatoes from the Purefoy Hotel Cookbook and ran across this site... can anyone help?

hi cooking202, is the porefoy resturant still in business? i have a 1949 edition of thier cookbook. i was so excited that someone had mentioned them. i live in pennsylvania and happened upon this wonderful cookbook at a garage sale a few years back. would love to hear from you. you can email me at my address

Hi--I remember hearing back in the seventies that the purefoy hotel had either burned down or had closed for good, so sorry to be the bearer of bad news. good luck on recipes, they were the best.

Hi,
I am Eva Brunson Purefoy's great neice. She owned and operated the Purefoy Hotel which began it's modest beginning in 1916 in Monroeville, Alabama. It was so popular she decided to modernize and expand to a new location. On May 17, 1920 the Purefoy Hotel opened in Talladega, Alabama. Mrs. Purefoy sold the hotel to her brother-in-law (and my Grandfather), Edward T Hyde in 1944. He was the hotel's previous manager. In 1961 it was decided to close the 88-room hotel. By the time the doors closed for good, it had been successful for 47 years and had come a long way from the 15-room boarding house that began its life in Monroeville.
The first edition of The Purefoy Hotel Cook Book was printed in 1937, copyrighted in 1941, and revised 9 times and reprinted at least 16 times.
This famous cookbook has become a classic with tried and true recipes of old southern cooking. "Sister" Purefoy, as our family called her, died in 1975. She would be smiling if she could see how her recipes are being shared and appreciated here on this website. :)

Baked Lima Beans with Tomatoes
from Purefoy Hotel Cook Book

4 slices bacon
2 cups lima beans
1 cup canned tomatoes
2 tablespoons chopped green pepper
1 small onion, chopped
Mustard and salt

Wash beans. Cover with cold water. Cover. Heat slowly to boiling. Cook slowly until beans are tender. Drain. Save liquid. Pour beans into well-oiled casserole. Combine tomatoes, green peper, and onion. Pour over beans. Add sufficient liquid to nearly cover beans. Season to taste. Place bacon slices across the top. Bake in slow oven (350F) about 2 hours. 8 servings.
