Directions

  1. Boil the potatoes, without peeling, in salted water for 20-25 minutes until fork-tender.
  2. Mix together the creme fraiche, lemon juice and zest. Stir in the salmon strips and the dill and season with salt and ground black pepper.
  3. Drain the potatoes and allow the steam to evaporate. Peel and press through a potato ricer.
  4. Mix the flour with the baking powder and a pinch of salt. Add the eggs, butter and milk and mix to a smooth batter. Stir in the potato.
