Directions

Cut lobster meat into big chunks or smallto your liking, in a bowl add lobster meat, mayo, horseradish sauce, lemon, black pepper & celery mix well & place in fridge. Heat up a frying pan or a flat griddle add butter to both sides of roll & brown on both sides, remove buns from heat add lobster meat to the rolls. Side of salad or chips & enjoy

This is ALMOST right. I, too, am from MA and like my lobster rolls in the most traditional and pure form: lobster meat, a little mayo, NO horseradish sauce or any hot sauce, a squeeze of fresh lemon juice, a little salt and pepper. The salad is placed on warm, toasted New England-style, top-split hot dog rolls (buttered before toasting/griddling/grilling) which have been lined with just a hint of shredded iceberg lettuce. Now THAT's the way I, and many others in New England, do it!

Oh, yeah, I also do the celery, but I slice it very thinly instead of chopping it.
