Directions

Preheat the oven to 350℉ (180℃).

In a medium bowl, whisk together applesauce, olive oil, butter, brown sugar, eggs, peanut butter and vanilla until well blended.

Stir together the flours, cornstarch, salt, baking soda and baking powder in another large mixing bowl.

Pour the wet ingredients into the dry ingredients, and stir until just incorporated and moistened.

Stir in the chocolate chips and walnuts.

Roll into balls about 1½ tsps onto a oiled cookie sheet or lined with parchment paper or baking mat.

Flatten slightly (they don't flatten much while cooking).

Bake for 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

Makes 3 to 4 dozen.
