Deluxe Hot and Sour Wonton Soup

In a latest experiment with homemade soups, I combined the ideas from my own Hot and Sour Soup and my mother-in-law's Shanghai Meatball Soup. The result was unquestionably great and both my sons (who are excellent cooks themselves) declared it my finest effort. I hope you enjoy it, too!!

Ingredients

Meatball Ingredients
1# turkey sausage, ground turkey or ground pork. (We like the spicy turkey sausage)
3/4 c. panko crumbs or uncooked oatmeal. (I used Panko)
2 green onions, finely chopped - white and green parts
Several tablespoons of finely chopped cilantro
1 T. dry sherry (optional)
1/2-1 tsp white pepper
1 T. soy sauce (I used more)
2 tsp sesame oil (optional

Soup Ingredients
2 quarts rich chicken broth
1- 2 cans condensed chicken broth
1/3# raw pork or sausage. (If using loin meat, julienne.
2 T. each minced garlic and red chile paste (I ended up adding much more of the red chile paste because we like spicy foods)
2-4 T. soy sauce. (Start with less and add more to taste)
3 T. corn starch stirred into 2 T. water
1-2 cup bamboo shoots, julienned
1-2 cup coarsely chopped water chestnuts
1/2 cup diced white onion
1/2 cup julienned carrots
1 cup shitake mushrooms, sliced and stems removed
1 cup dried wood ear mushrooms, soaked in warm water or chicken broth, and sliced. (I used more, because we like them more than shitake)
1 12 oz package of firm tofu, cut into slices about 1/2" by 1"
1/4 cup white vinegar (I used more, to taste)
1-2 tsp white pepper
1-2 tsp sesame oil (I used more and used La Yu chili oil)
1/2 - 1 package of Costco Chicken and Cilantro Wontons (they are already cooked)

Chopped green onions and cilantro, to be put over soup when serving.

Directions

Meatballs 1. Gently mix all ingredients together. 2. Form into small (1") meatballs. 3. Sauté or broil for about 5 to 7 minutes, until fully, but not overly cooked.

Soup Mixture 1. Bring chicken stock to simmer

  1. Add soy sauce, cooked mini meatballs, mushrooms, onion and chile paste. Simmer 10 minutes

  2. Add pepper, vinegar, bamboo shoots, water chestnuts, and tofu. Simmer 5 minutes

  3. Add cornstarch and water mixture

  4. Bring back to a simmer, and add julienned carrots and Costco wontons.

  5. Simmer for 5 minutes and add sesame oil.

  6. Taste and adjust flavor by addition more vinegar, soy sauce, chile paste, or pump up chicken flavor with a packet or two of Chicken Flavor Burst.

  7. Serve with chopped onions and cilantro on top of hot soup.
