Sauteed Mushrooms and Lettuce Sandwich

Sandwich is probably one of the simplest way for a quick-fixing meal, and there are so many ways to assemble a sandwich, such as this one that gives you a tasty and healthy meal within less than 15 minutes.

white button or cremini, sliced

or as needed, or any your favorite salad green

2 slices whole wheat bread
or whole grain, toasted if needed

237 ml mushrooms
white button or cremini, sliced

1 x salt and black pepper
to taste

or as needed, or any your favorite salad green

Directions

Heat the olive oil in a small nonstick skillet over medium or medium-high heat until hot.

Add the shallots, stirring occasionally, and cook for about 4 minutes until the shallots are browned and partially caramelized.

Stir in the garlic if using and the mushrooms, and cook for another 4 to 5 minutes until the mushrooms are browned.

Season with salt and black pepper to taste.

Place the caramelized shallots and mushrooms on one slice of bread.

Place the lettuce or any salad greens on top of mushrooms.

Put the other slice of bread over the lettuce to form a sandwich.

Serve and enjoy.
