Bhel Puri

This is the most commonly sold chaat in the streets of Mumbai. Almost every street has its own friendly bhelwala with his inimitable blends of chutneys and masalas. Bhel is a delectable combination of papadis, puffed rice, sev, onions, potatoes, raw mango and chutneys. The proportions of the various chutneys can be changed to adjust to your personal preferences. Toast the puffed rice to make bhel crisp before using it to make bhel. If you store the puffed rice, sev and papadi and refrigerate or freeze the chutneys, you can rustle up a heavy snack in a jiffy for your hungry kids returning from school.

Directions

Combine all the ingredients in a large bowl and toss gently until all the ingredients are well mixed.

Divide into 4 equal portions and garnish each portion with the papadis, sev and coriander.

Serve immediately.

Tips Nylon sev is a very thin variety of deep fried besan sev used as a topping for chaats. It is readily available at most provision stores.

Note

If you want you can roast puff rice (it is optional).I do and always get a delicious flavour. For roast you have to hot a pan n just roast it for 5min only without using oil.

What id Sev, the recipe sounds economical and delicious. Indian cuisine has so many great flavors. Really like the recipes you have been sharing :)

You are right this is very economical and most delicious and famous street indian food snack with full of flavours and chutneys (you can use amchur i mean raw mango chutney instead of tamarind in it also.it ll enhance your taste i am sure).
Sev are crisp fried sticks of extruded chickpea-flour dough .To make sev, chickpea flour is combined with salt, spices and water to form a dough. The dough is then pressed directly into hot oil to cook the noodles.You ll find it in a well stocked Indian grocery very easily.
