An easy crock pot beef stew recipe. This beef stew with tomato soup, potatoes, and carrots provides plenty of sauce. Perfect for serving with egg noodles, rice or crusty bread.

Directions

Heat oil in a heavy-bottomed oven-proof pot over medium-high heat.

Toss the stewing beef cubes with flour, salt, and black pepper; brown on all sides, adding the onions about 1/2 way through the browning.

Add the red wine, scraping up any fond (brown bits = flavor!).

Add the tomato soup, water, and basil; stir to combine.

Crock pot beef stew

Add the quartered onion, carrots and potatoes to your slow cooker. Pour the beef mixture on top, cover and cook on high for 2 hours, or low for 4 to 5 hours.

Oven slow cooked

Cover and bake in 375℉ (190℃) F oven 1 hour. Add vegetables, stir to combine and continue cooking, covered, for another hour or until done. The vegetables should be soft when pierced with a fork, and the beef is tender.

Serve over egg noodles, rice and/or with crusty bread to mop up the sauce. This recipe makes ample sauce!
