Chicken Tortellini Soup

A refreshing change of pace from traditional chicken noodle soup. Using cheese tortellini instead of plain noodles makes for a pleasant and filling take on an old classic.

Directions

Melt the tablespoon of butter in a heavy pot over medium heat until sizzling.

Add the holy trilogy of vegetables (onions, carrots, celery) to the saucepan and sauté for about 5 minutes.

Add chicken and cook 5 minutes until the chicken is cooked through.

Add chicken stock (or use bouillon cubes + water to match), along with the thyme and garlic powder and bring to the boil and reduce heat to simmer until all of the vegetables are tender.

Increase heat, add tortellini and cook for about 10 minutes (or until the tortellini is al denté according to package directions).

Taste, and correct seasoning as wanted with salt and white pepper; finish with the parsley.

Variation

Use leftover turkey or chicken. Add the diced turkey or chicken at the same time as when you add the tortellini.
