The flavor was great, I used mixed greens, also added a clove of minced garlic, and it was delicious. Next time I will add some sun-dried tomatoes, that would be even better!

Directions

In a saucepan, heat oil and sauté onion until translucent.

In a bowl, combine the sautéed onions with all remaining ingredients except tomatoes.

Stuff filling into tomatoes.

Bake in a preheated, 350℉ (180℃) F oven for 15 minutes.

Make 4 to 6 servings.

Tinawashere

This would make a great salad as well if you:
1) Replace the egg with boiled then chopped eggs (mix with filling or top)
2) replace the bread crumbs with croutons
3) used fresh onion (purple 2 color)

*also add 2 cloves minced garlic, lemon or wine
