There are many variations of classic Mexican tortilla soup. This comforting Crockpot Lentil-Kale Soup is a wholesome, nutrient-packed dish featuring tender lentils, vibrant kale, and a medley of vegetables simmered in a flavorful broth. With minimal prep, the slow cooker does the work, creating a thick, stew-like soup that’s perfect for chilly days or a healthy weeknight meal. Pad Thai Spring Rolls
Pad Thai Spring Rolls

Contrary to what you make think, not all Spring Rolls are deep-fried. They can be served fresh as well, which is a lovely option for an appetizer or light meal this summer. It’s quite an extensive list of ingredients, but if you are a fan of Thai cooking, it’s likely you have most of them in your pantry or fridge already. The preparation is a simple whisk, toss, hydrate, roll. And our special touch? We added a peanut sauce to make a “Pad Thai” version, as well as some chillies. Stop, drop and roll – these babies are on fire!

Pea & Sweetcorn Fritters
Pea & Sweetcorn Fritters

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn’t make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn’t happen if you only use 1 teaspoon of the mixture). If this happens we’d recommend trying them with less mixture and making smaller fritters, this way it’s easier to flip them without breaking.

Saagwalla Dhal
Saagwalla Dhal

This is the other dhal we made yesterday, when the cooking was close to the end, added some spinach that was cooked with garlic, dried hot chili peppers and mustard seeds, which gave the dhal extra zing and tang, another delicious dhal recipe, of course another good recipe that you can serve with naan bread and raita :)
