Had some dried dates in the freezer for over two years, it was a Christmas gift with another three dried fruits in a nice package. It certainly took up some space, so we decided to make something with these dried fruits, and started from dates. The original recipe had some good prints, so I decided to give it a go, and made it healthier by using olive oil, applesauce to replace some butter, using whole wheat flour instead of all-purpose flour. I was certainly thrilled by the result, the bars were so moist, and packed with flavors. The date layer that I thought would be nasty initially was actually delicious, adding a layer of nice sweetness, well balanced. Have been having these bars for breakfast with coffee in the last a few days. YUM!
