This is the kind of food I make when I want something to east right away. It's easy but tasty. I used a whole wheat English muffin that added extra fibre. Basil pesto, olive oil packed sun-dried tomatoes, marinated artichoke hearts and a few slices of pickled jalapenos made this sandwich absolutely mouth-watering and loaded with lots of nutrients. If you like, you can add a pan-fried egg or some crumbled bacon.
