This would make a nice starchy side dish. I didn't think the tortilla shells would absorb the buttermilk and eggs, but it did, for the most part. Admittedly, I added an extra egg, an extra 1/4 cup of buttermilk, and an extra 1/3 cup of corn (I used can corn, which was more than 1 cup, and which turned out fine). Instead of adding peppers, I used pepper jack cheese. It worked out fine and the corn's sweetness was a nice compliment to the spicy cheese. Easy to prepare. Nice looking dish and the. Side note: I like idea of using tortilla pieces as a bottom and middle layer for a casserole and wonder if some sort of mushroom concoction might also be good used in that way.
