Absolutely enjoyed this barley casserole dish. I used a very flavorful vegetarian beef broth instead, which gave the casserole surprisingly delicious taste. Barley absorbed all the flavors and became very tasty. I baked it for 1 1/2 hours in total. I also added half green bell pepper that I had on hand, added a few freshly minced garlic cloves when I sauteed the onions; in the end stirred in some red pepper flakes, which gave slightly heat to casserole. I found some of the barley was slightly chewy. Next time, I will add 1/4 cup more water, and will bake it in the oven for another 20 minutes longer.
