Quinoa has become one of the healthiest foods. It's high in fiber and packed with protein, it's not a grain but a seed. We have been making all kinds of quinoa recipes, made this casserole for dinner yesterday, and it came out very flavorful, tasty and light. Roasting quinoa in pan gave it the nicely roasting flavor. Instead of water, I used vegetable broth that's absorbed by quinoa during baking, which made the casserole super tasty. All the vegetables on top got roasted during the baking, which developed more yumminess. It was such a light and easy dish, perfect for a week-night meal, it's all in one pan.
