This salad was so refreshing and tasty. Lots of crunch, lots of flavors. Loved the mixture of all these fresh and juicy vegetables, we used cocktail tomatoes, and they were super juicy and sweet, which worked perfectly well in this salad. We also threw a few black olives in, used some yellow bell pepper and omitted the parsley. So easy to make, within about 10 minutes, we already started enjoying this delicious salad. If you like, you can sprinkle some feta cheese on top. Serving it with some pita bread or any bread completes the whole meal.
