Just spotted this the other day on America's test kitchen. Stop buying those tasteless cheese slices and make your own and you can add any other flavoring your heart desires! It has been modified for my own tastes.

So it had been over 2 years since being diagnosed with Celiac Disease and I still hadn't had any homemade banana pudding. Thanks to vitacost.com and their awesome gf selection I found some yummy vanilla wafers that were gluten free (Kinnickki brand). Of course my longing needed to be rich, creamy and worth the long wait lol. So here is the deliciousness! I think the cream cheese makes it better than any I've ever tried before.

These mashed potatoes are a hit. The cream cheese really enhances the flavor.

May use fresh or frozen strawberries, or may substitute other fruit of choice such as blackberries, peaches, etc.
