I was out of Tofurkey Italian Sausage tonight and needed to substitute something else because I can't buy it. I had a cupboard full of Bob's Vital Wheat Gluten and some TVP, so I figured I'd try making it. When my hubby came home, he tried it and immediately said "Write it down! Write it down!" I guess he liked it!

This is from Paul, who used to run an old BBS (remember those?) with a cooking "echo". You can use all beef or all turkey. Also good with some shredded Parmesan cheese sprinkled over the marinara before serving.

Making the sausages was not as hard as I thought, and it tasted amazing. No need for me to buy sausages any more, this homemade one rocks.
