This recipe is not your regular egg dish. These chilli-coconut egg clouds are a little bit of heaven, with a little bit of heat thrown in for your sinful side. The fluffy egg whites are mixed with the spicy chilli flakes and the desiccated coconuts to provide the perfect balance of flavours to please all of your different personalities. The chilli flakes are perfect for raising your metabolism and making you feel fuller for longer. The desiccated coconut is simply dehydrated coconut meat that has been shredded. This coconut contains nutrients like manganese and copper and is a good source of dietary fibre. It also has no cholesterol. Add in the eggs and you have a good source of protein, vitamin B2 and vitamin D. With just a few ingredients and a little skill you can start your day off firmly on the right foot with your head in the clouds.

So to start off with the first post, I decided to make a meal that screams of comfort food. Whilst it does take a bit of a while to get the meal done, once you take that first bite, heaven couldn’t seem closer if you were Adam trying to touch God’s finger in the “Creation of Adam” fresco created by Michaelangelo. The meal I speak of is Cottage Pie. There is much debate as to what exactly a cottage pie is and how it is different to a Shepherd’s pie...I don’t know. The dominant theory is that Sheperds pie uses lamb mince, whilst a cottage pie uses beef mince. I don’t know about you, but the term “Sheperds Pie” does not get my tastebuds going quite as well, so I prefer the term cottage pie. Besides, comparing the price of ground (mince) beef to ground lamb, a student would pick up the beef mince in a heartbeat without even so much as glancing at the lamb in the meat section. This cottage pie that I made is full of flavour, and just makes you want to cuddle up next to a fire and watch TCM movies all day either by yourself, or with a significant other. Here is the recipe:
Crispy golden French toast sandwiches stuffed with sweet jam, dusted with cinnamon sugar. Ready in 30 minutes, these fun triangles turn breakfast into handheld heaven for kids and adults.
Moist apple quickbread studded with tender fruit chunks, walnuts, and orange zest. Buttermilk keeps these loaves incredibly soft, while an overnight rest lets the flavors meld into breakfast heaven.
Five-day beans: a slow-cook project where dried limas soak, simmer with aromatics, rest, and finish under a crusty cream and breadcrumb topping. Bean heaven for patient cooks.
