We have lots of cherry tomatoes growing at our backyard, they are juicy, sweet and screaming the ripeness to us. This is the recipe we made, and it was so tasty. Loved the crispy phyllo pastries that's also low in fat and calories, it offered some great texture and flavor. Caramelized onion, goat cheese, and cherry tomatoes were topped over phyllo. It's hard to go wrong with all these yummy things together. You can have it as an appetizer, side dish, main dish, or whatever you feel like. It's delicious!
