This dish is like an easy version lasagna. Made it for lunch, and it came out quite tasty. Ricotta added lots of creaminess with a much lighter fat content. I added 2 tablespoons tomato paste along with tomatoes, which really help thicken up the sauce. Mushrooms gave the meaty texture with great flavor. It was much easier than making a lasagna, but had all the yumminess we were craving.
