This is a very popular Chinese recipe. In the traditional way, always use lots of chili sauce and scallions. There are some differences in this recipe, we add mushrooms to give the meaty texture, add water chestnuts to add some nice crunch. Delicious and refreshing.

Noticed that this recipe has been popping out quite often, finally made this crock-pot rice pudding, and it came out surprisingly creamy and delicious.
I wan't sure if it would work well, the result proved that it worked like a charm. I used 1% milk that's all I had on hand; if using whole milk, the rice pudding would come out even creamier and richer. I also split one vanilla bean, put both the beans and pots into the rice pudding along with the cinnamon stick. It smelled so good during and after cooking.
Enjoyed this yummy rice pudding for a few days. If you are a big fan of rice pudding, this recipe will definitely make you very happy :)
