A very tasty cake, everybody asked for the second slice.

Made this apple cake a while ago, and finally got the photos uploaded. The cake was moist and delicious. I used half whole wheat flour and half all-purpose flour to make it a bit healthier, reduced sugar to 1 1/2 cups, which was sweet enough for us. Also added 1/2 cup chopped pecans to the apples, and it was a great addition.

This moist, buttery and flavorful applesauce pound cake is always a winner at our place, we make it very often, sometimes after main course, sometimes we just have it as our coffee cake with some coffee or tea. It is a wonderful and delightful cake :)

You can't believe how delicious and moist this cake comes out, and best of all is that the cake is made with mostly whole wheat flour, applesauce and yogurt, then glazed with a thin layer of lemony icing. Looks so appealing and tastes even better!

Normally, this cake is made in a bundt or tube pan. Today, I chose to make only half the recipe and bake in four ramekins for approximately 17 minutes. While the glaze was still wet, I sprinkled the little cakes with some multicolored nonpareils to make them a little more festive. Feliz Cinco de Mayo!
