Oatmeal-Bran Cookie Bars (adapted from Bran Appetit)
This dish was our lunch today, quite tasty. A delicious way to cook seasonal veggies, such as tomatoes and zucchini.
I didn't have scallions, so I chopped 1 large yellow onion instead, used whole wheat pasta, and I also added 2 cloves of minced garlic. Then followed the recipe, and I had a great lunch. Well satisfied!
