Thick udon noodles with a spicy Asian dressing that's easy to make and ready when you are.
In a latest experiment with homemade soups, I combined the ideas from my own Hot and Sour Soup and my mother-in-law's Shanghai Meatball Soup. The result was unquestionably great and both my sons (who are excellent cooks themselves) declared it my finest effort. I hope you enjoy it, too!!

The Japanese version of rice is called "Japonica". It's short grain which makes the rice round and extremely sticky when cooled. You can also use aborio or risotto rice which works well.
Sesame oil, soy sauce, chili-garlic sauce, garlic and ginger make a succulent sauce that is perfect for marinating the tofu. Then cook tofu until crusted. Stir-fry with several fresh vegetables, and pour the delicious sauce to thicken up at the end. This Asian inspired stir-fry can be served with cooked rice, quinoa, or any your favorite grain.

This spicy Indian dish is best served with basmati or jasmine rice, warm nan, and ready-made mint chutney. A mango sorbet would be a nice finish to this meal.
