Brilliant combination. I used skinless and boneless chicken thighs to cut down on the fat. The meat just fell apart and was packed with flavor. The slow simmering sauce was loaded with layers of flavor. The polenta was a perfect addition. It seemed a bit thick but once plated with the sauce it loosened up and became creamy, took on the flavor of the veggies and sauce and very satisfying. Cost effective, low in fat and gosh darned tasty!
