These no-bake bars have old-fashioned church potluck energy, and honestly, that’s a compliment. Graham crackers form the top and bottom layers while a cooked date and brown sugar filling holds everything together like a sticky, caramel-flavored glue.

Cooking the dates with brown sugar softens them into a thick, spreadable paste. You want them genuinely soft, almost jammy, before pulling the pan off the heat. If your dates are on the drier side, add a splash of water to help them break down.

Let the filling cool before spreading it on the crackers. Hot filling will make the graham wafers go soggy immediately, and you want them to keep some crunch.

A layer of chocolate icing on top takes these from homey to something you’d actually plate for company.

Pro Tips

  • Press the top layer of wafers down gently so they adhere to the filling without cracking
  • Chill the assembled bars in the fridge for at least an hour before cutting for clean slices
  • Use a sharp knife dipped in hot water for the neatest cuts

Variations

  • Stir ¼ cup chopped walnuts or pecans into the date filling for crunch
  • Use peanut butter icing instead of chocolate for a PB-date combo
  • Add a pinch of cinnamon to the date filling for extra warmth
