Cooking the dates with brown sugar softens them into a thick, spreadable paste. You want them genuinely soft, almost jammy, before pulling the pan off the heat. If your dates are on the drier side, add a splash of water to help them break down.
Let the filling cool before spreading it on the crackers. Hot filling will make the graham wafers go soggy immediately, and you want them to keep some crunch.
A layer of chocolate icing on top takes these from homey to something you’d actually plate for company.

Place graham wafers in bottom of 9×9 inch pan, set aside.
Cook dates with the brown sugar until soft, remove from heat and add vanilla.
Cool.
Spread on the layer of wafers in pan, then cover with more wafers.
Can be iced with chocolate icing.
