Sauteed onions, cooked rice, chopped broccoli, cheddar cheese, and cream of mushroom soup all get tossed together and baked uncovered until everything melts into a bubbly, golden dish.

  • Use day-old rice for better texture. Freshly cooked rice can turn mushy in the casserole

Directions

Sauté onions in butter and add the remaining ingredients.

Pour into a two quart greased casserole dish.
