Had some leftover brown rice, bell peppers and tomatoes, and Indian flavor is always one of my favorites. Then came out this yummy recipe by using up all my leftover ingredients. Cumin seeds, fennel seeds and curry powder really enhanced the flavor and gave the dish lots of punch. Ginger, garlic, green and red onions, and chili peppers added extra deliciousness. Tomato and mushrooms juiced up the dish. Served it with a simple and creamy cucumber rita, so refreshing and tasty.
