Whole Wheat Peach Coffee Cake

This is a recipe that I made up as I walked home from work one day. As far as I know, it is original. I hope you will try this moist peach cake and tell me what you think.

Directions

Pour ¼ cup melted butter into a square or round glass baking dish , spreading to completely coat the dish.

Place sliced peaches in baking dish and stir to completely coat with butter. Pour butter-coated peaches into a medium bowl and set aside. The baking dish should have a nice buttered coating.

Place flour, soda, sugar, cinnamon and salt in a large mixing bowl and combine thoroughly. Make a well in the center of the mixture.

In small mixing bowl, mix buttermilk, vanilla, egg and remaining ¼ cup butter until thoroughly blended. Pour into the well of the flour mixture and stir lightly until just blended. Do not over mix.

Spread ½ of the batter into the baking dish. Spread peaches onto the batter. Spread remaining ½ of the batter over the peaches. Sprinkle with 2 tablespoon brown sugar and a sprinkle of cinnamon, if desired. Bake uncovered in 350℉ (180℃) oven for 50 minutes.

Let cool. Serve warm or at room temperature.

Love peach coffee cake! This recipe sounds yummy, love the idea of using whole wheat flour, but how much suger should be added? This is the only question. Thanks :)

I can't believe I left out a key ingredient. Strike it up to being a newbie to the online recipe world. I've inserted 1 cup of sugar in the ingredients now. Thanks for pointing it out and ENJOY!

One large vanilla WHAT? Teaspoon, tablespoon, bean, what?

Have you tried it with All Purpose white flour?

Coffee cake is usually made with all-purpose flour, so it should be perfectly delicious when you make it with all-purpose white flour. Especially the one I made with whole wheat flour still came out super fluffy and tasty, so if you make it with white flour, it should be even more fluffy :-)
