237 ml quinoa

Directions

Rinse quinoa thoroughly in a small strainer or by running fresh water over the quinoa in a pot. Drain. Put quinoa and water in 1½ quart saucepan; bring to boil. Reduce heat to simmer; cover and cook until all water is absorbed (10-15 minutes). When done, the grain appears translucent and the germ ring will be visible.

Besides adding some chicken bouillon to the cooking water, I added thawed frozen corn kernels, rinsed and drained black beans and some cumin and chili powder to give this side dish a Latin touch. Top with a sprinkling of chopped or torn fresh cilantro. Could serve hot, warm or at room temperature.
