6 ½ cups water
3 ½ pieces chicken
¼ medium yellow onion
1 tablespoon salt
or to taste
1 tablespoon cayenne pepper
1 ½ teaspoons black pepper
1 x vegetable oil
1 ¼ cups roux
at room temperature
1 ½ pounds smoked sausage links
1 cup parsley leaves
¾ cup scallions, spring or green onions
½ cup celery
