Very tasty treat! Easy to make and very moist. I added 1/2 cup chopped pecans to the batter. Would be good with some dried cranberries also.

Directions

Preheat oven to 350℉ (180℃).

In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.

In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla extract.

Gradually add the flour mixture to the pumpkin mixture; beat well.

Pour batter into a 9 x 13-inch baking dish that has been coated with nonstick vegetable spray.

Bake for 30 minutes or until toothpick inserted in center comes out clean.

Cool completely in pan before serving.
