473 ml all-bran cereal

118 ml raisins, seedless
chopped

Directions

Mix cereal, prune juice, applesauce and egg in a bowl, let stand 5 minutes.

Add fruit if desired. Mix flour, baking powder, baking soda and cinnamon and add to cereal mixture.

Stir just until moistened and spoon into muffin pan sprayed with Pam. Bake at 350℉ (180℃) F 18 to 20 minutes, or until tested wooden skewer inserted into centre comes out clean.

Can whole wheat flour be substituted?

I substituted the flour for almond four and they came out great!

I'm so glad I found this recipe. All the ingredients were right on hand and the muffins are healthy AND delish!

This recipe makes a moist, delicious muffin.

I added a tbsp of honey and 2 tbsp oil to add some fat. I chopped some dried apricots instead of raisins.

I used whole grain rolled oats instead of bran, and also used dried apricots instead of the raisins, and they came out great!
