Pork Chops with White Beans

Low Cholesterol, Trans-fat Free, High Fiber
 

Ingredients

4 each pork chops
6 ounces each

1 x creole spice
*
2 tablespoons olive oil
1 cup onions
chopped
½ cup celery
chopped
½ cup green bell peppers
chopped
2 tablespoons garlic
minced
3 cups white beans
dry, soaked overnight
1 cup tomatoes
chopped
3 each bay leaves

6 cups stock
mild
1 x salt and black pepper

Directions

Season pork chops with Creole spice.

Heat oil over medium- high heat ina Dutch oven or heavy, deep pot and brown chops on both sides; remove to a plate.

Reduce heat, add celery, onions, green pepper and garlic, and sweat until tender.

Stir in beans, tomatoes, bay leaf and stock and return pork chops to pot.

Bring to a boil, cover, reduce heat and simmer on very low heat all day, or until beans are very tender.

Adjust seasonings.
