Pasta with Hot Sausage and Rapini

Fairly easy to put together, and the dish was packed with flavor and very filling too. It is an excellent way to add dark leafy greens such as rapini into your meal. Feel feel to use kale or spinach to replace rapini.

Directions

Add 1 tablespoon olive oil in a large sauté pan, heat over medium to medium-high heat until hot. Add rapini and a generous sprinkle of salt, cover and cook until wilted, 5 to 6minutes. Transfer to a plate, and set aside.

Add the remaining olive oil in the empty pan, heat over medium-high heat until hot. Stir in the sausage and cook until browned, 4 minutes. Mix in remaining garlic, stir and cook until very fragrant, about 1 minute.

Stir in broth, pasta and wine if using and bring to a boil. Reduce the heat to medium, cover and cook until pasta is cookc and most of the broth has been absorbed, 7 minutes.

Gently mix in rapini, hot peppers and parmesan until well combined. Taste with more salt and black pepper if needed. Serve warm with more Parmesan if desired.
