Okra in a Savoury Sauce

Ingredients

1 medium onions
thinly sliced
2 tablespoons vegetable oil
3 each garlic cloves
minced
1 tablespoon ginger
grated
1 teaspoon green chili peppers
chopped
¼ teaspoon turmeric

2 tablespoons almonds
ground
1 each tomatoes
chopped
10 each okra
cut into 3/4 inch disks

¼ teaspoon salt

Directions

Sauté onion in oil, stirring constantly until reddish brown, 10 to 12 minutes.

Stir in garlic, ginger, chili, turmeric and almond.

Add tomato and cook for a minute.

Add okra and mix well.

Simmer, covered, for 6 or 7 minutes.

Stir in salt.

Just before serving, sprinkle cilantro or parsley on top.
