Homemade Buttermilk Biscuit Baking Mix (Whole-Wheat)

Fac365ba817a42afbfc2 550

It's easy to produce baked goods using this healthy version of a buttermilk baking mix. Substitute for Buttermilk Bisquick.

1.4 l whole-wheat flour
pastry flour works best
414 ml all-purpose flour
45 ml baking powder
15 ml salt
30 ml sugar
177 ml buttermilk, powdered
355 ml butter
or vegetable shortening

Add the whole wheat flour into a food processor and process for 2 minutes.

Add the rest of the dry ingredients and run the processor another 30 seconds until thoroughly combined.

Add the butter or shortening a bit at a time with the processor running until combined into a slightly crumbly powder.

Store in the refrigerator (if using butter) for up to 2 months.

I don't understand this recipe! When do you add the buttermilk? Along with the butter?

The recipe uses buttermilk powder. It is added along-with the other dry ingredients.

We can't get Buttermilk powder.....could we leave it out and add the liquid buttermilk at the moment when preparing a small batch ?
Thank you so much .

Can I substitute coconut oil so it doesn't need to store in the fridge?
