12 oz cauliflower florets (about 4 cups)
1 oz goat cheese
2 tablespoons plain low-fat Greek yogurt
1 tablespoon chopped fresh chives
Directions
Arrange cauliflower in a steamer basket over boiling water. Cover and steam 12 minutes or until tender. Cool 10 minutes. Transfer cauliflower to a blender or food processor. Add cheese and yogurt; cover and process until smooth. Season with salt and pepper to taste. Transfer to a serving bowl; sprinkle with chives.
