Directions

Add all ingredients and a pinch of salt in a medium saucepan, stir well and cook, covered, over medium heat, stirring once a while, until plums fall apart, 24 to 26 minutes.

Discard cinnamon stick and zest.

Purée in batches in a blender until smooth (Be cautious when working with hot liquids).

Let purée go through a fine-mesh sieve into a bowl, discarding solids.

Cool, uncovered, then refrigerate, covered, until chilled, at least 3 hours.

Add purée in ice cream maker and let ice cream maker run according to the manufacture's direction.

Spoon into an airtight container and freeze until harden, at least 2 hours or overnight.
