Chicken and Stars Soup with Peas


This is an easy recipe with some great flavor. Next time I will have rice instead of pasta, and I think it will be yummy too.













Trans-fat Free, Good source of fiber


1 ½ cups pasta
alphabets, uncooked
1 tablespoon butter
or margarine
3 medium carrots
finely diced
2 each celery stalks
finely diced
6 cups chicken broth, low salt
skimmed of fat
1 ½ cups chicken
cooked, diced
½ cup green peas
frozen, thawed
1 x salt
to taste


Prepare pasta according to package directions, drain and set aside.

Melt the butter or margarine in a medium saucepan.

Add carrots and celery.

Sauté vegetables over medium heat until soft, about 7 to 10 minutes.

Stir in chicken broth, diced chicken, pasta and peas.

Bring the soup to a boil, season to taste with salt and serve.
