Directions

  1. Heat a skillet over medium heat. Crumble the sausage, add to the skillet and cook until browned, about 5 minutes. Set aside and remove any grease.

  2. Scramble the eggs in the same skillet, about 3 minutes. Add the sausage and combine. Sprinkle with the cheese, cover and remove from heat.

  3. Spoon the egg, sausage and cheese mixture down the center of each tortilla; top with salsa if desired. To wrap, fold up the bottom, then fold around the sides.

Serve warm.
