lightly toasted

45 ml raisins, seedless

453.6 g spaghetti
preferably whole wheat

59 ml pine nuts
lightly toasted

118 ml Parmesan cheese

Directions

Bring a large pot of salted water to a boil, cook the pasta for 10 to 12 minutes or until desired consistency.

Drain and reserve 1 cup of cooking water. Return the pasta to the pot.

Meanwhile Heat the oil in a large skillet over medium-high heat.

Add the onions and cook, stirring occasionally, for about 6 minutes or until browned and softened.

Add the garlic and red chilli if using, stirring often, and cook for about 1 minute or until fragrant.

Stir in the cauliflower, raisins and a few tablespoons of water.

Cover and cook for about 5 minute until cauliflower are fork tender.

Add the cauliflower mixture, pine nuts, parmesan cheese and enough pasta water to the pasta, and gently toss until well combined.

Serve warm.
