This is a recipe from everyone's favorite restaurant in Utah. You can shove everything in a flour tortilla or make a huge salad. Enjoy!

Ingredients

Cafe Rio Dressing:
1 buttermilk ranch dressing packet (Make as per recipe)
2 tomatillos
1/2 bunch of cilantro
1 clove garlic
juice of 1 lime
1 jalapeno (use the seeds if you want more spice)
Blend all ingredients in a blender or food processor.

Cafe Rio Chicken
1 bottle Kraft Zesty Italian Dressing
1 Tb cumin
1 Tb chili powder
2 cloves garlic crushed
5 lbs chicken breast (can be frozen)
Cook all together in a crock pot for 4 hours add, then shred

Cafe Rio Rice
6 cups water
4 tsp chicken boullon
4 tsp garlic crushed
1/2 bunch cilantro
1 can green chilies
3/4 tsp salt
1 Tb butter
1/2 c onion chopped
3 cups rice
Combine all ingredients in a saucepan, bring to a boil, lower heat to simmer and cook covered 20 minutes.

Directions

Build your own taco or salad. Add additional ingredients ie olives, tomatoes, cheese, onions, cilantro, and lots of lettuce especially for salad. yum
