Ingredients

118ml margarine
reduced-calorie
1x sugar substitute

237ml sugar
plus 2 tablespoons
2large eggs
414ml all-purpose flour
14ml baking powder
237ml apples
coarsely chopped, peeled

3medium bananas
chopped
1x nonstick cooking spray

118ml almonds
chopped

Directions

Cream margarine in a large bowl; gradually add sugar substitute, beating at medium speed until light and fluffy.

Add eggs and beat until thick and lemon coloured.

Combine flour and baking powder; add to creamed mixture, mixing well.

Fold in apple and banana. Spoon batter into a loaf pan coated with cooking spray.

sprinkle with chopped almonds on top if desired.

Bake at 180 degrees C℉ (180℃) for 65 to 70 minutes or until a wooden pick inserted in center comes out clean.

Cool in pan 10 minutes; remove from pan, and cool completely on a wire rack.
