1 package soaked in water until pliable

Directions

Heat 1 Tablespoon stir-fry oil in wok or skillet on high heat.

Stir-fry ginger and garlic for one minute.

Add onion and stir-fry for 5 minutes.

Add carrot and mushrooms, cook for 2 more minutes.

Add spinach or broccoli or your choice of vegetables and 1 Tablespoon of Braggs Soy Sauce.

Sauté for 30 seconds and transfer to plate.

In same skillet or wok, add 1 tablespoonful of oil, 2 tablespoon soy sauce, sesame oil, and drained bean threads.

Stir-fry for 5 minutes. Fold in vegetables mixture and serve.

This is the kind of dish that I'd like to have everyday. Love bean threads, I always have several different types of bean threads stored at home. Stir-frying or making soup with it, always delicious. This recipe sounds very easy, and it's versatile enough to use any my favorite veggies. Would throw in a bit cilantro in the end :)
