Directions

Preheat oven to 375℉ (190℃).

Butter and flour a 9x5 inch loaf pan and set aside.

Add the milk and lemon juice in a glass measuring cup, and stir well, allow to stand until curdled, about 30 seconds.

Add the whole wheat flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl, whisk until well combined. Set aside.

Beat the eggs and sugar in a large bowl with an electric mixer until smooth.

Beat in the mashed bananas, the milk mixture, vegetable oil, and vanilla extract until almost smooth.

Pour in the flour mixture, beat just until all the ingredients are incorporated. Do not over beat. Or you can use a spatula to mix.

Spread the batter into the prepared loaf pan.

Bake until a toothpick inserted into the center comes out clean, about 1 hour.

Cool in the pan on a wire rack for 10 minutes.

Transfer on the wire rack and let cool completely.
