1 lb boneless chuck roast
½ teaspoon pepper, ¼ teaspoon salt
1 cup beef broth
½ cup red wine
2 tablespoons balsamic vinegar
½ cup chopped onion
2 cloves garlic, minced

Directions
Heat oil in a large nonstick skillet over medium-high heat. Rub beef evenly with pepper and salt. Add beef to pan; cook 2 minutes per side or until browned. Place beef in a 3- or 4-quart slow cooker. Add broth, wine, vinegar, onion and garlic. Cover and cook on Low 6 hours or until tender.
